Cinnamon bars- recipe

December 23rd, 2009 at 03:51 am

This recipe was in an old book of my Mom's, under "resistant cookies", meaning they are long lasting and will travel well!

1 cup raisins
1/2 cup of water
1/2 cup margarine
1 cup sugar
2 eggs
2 cups sifted flour
1 teaspoonful baking poweder
1 teaspoonful (ground) cinnamon
1/4 teaspoonful (ground) nutmet
1 teaspoonful vanilla
1/2 cup finely chopped nuts (I used almonds, as Ale prefers them)

Boil the raisins for 5 minutes, then let cool.
Cream the margarine with the sugar, ad the eggs one by one, the raisins and the vanilla. Sift all dry ingredients together and add them together with the nuts.

Place in a mold, greased and sprinkled with flour. Bake at 176°C (~350°F) for 15 minutes.

Let cool completely before cutting in squares. Yields 3 dozen, approx.

See? My kind of recipe! Super easy, and fast! (not to mention delicious!)

They sound good. It's a + that they sound simple, and a ++ that they are all ingredients I would normally have on hand.

I like to cook bar cookies because the work is over with so quickly. I think I just might try these this afternoon. Thank you.

Could you tell me what size pan is ideal? I was thinking to use a 13 by 9 inch pan (33 by 23 cm). Is 15 minutes correct? Seems that my size pan it would be more like 25-30 minutes, but longer in a smaller pan. I do have a much larger pan on which I could spread them very thin. Would that be the better way to do it?

    Joan,
I used a pan (rather, one of those fire-resistant oven dishes) about that size. I do think they took a bit longer, but, since my oven doesn't really have degree settings, I just go by the toothpick method! The recipe did say 15 minutes.

Okie-doke. I've got my dry ingredients mixed and the margarine creamed with sugar, but am setting them aside until tomorrow as I have brownies in the oven at the moment and have a party to go to in 45 minutes. Wish I could have gotten these resistant cookies done first. Smile
